I didn't get enough rhubarb from my garden to make a pie this year, so I made this simple syrup for strawberry-rhubarb soda instead.
Strawberry Rhubarb Syrup & Soda - adapted from Food & Wine
Ingredients
1 cup water
1 cup rhubarb, chopped
1 cup strawberries, chopped
½ - ¾ cup sugar (add more or less to taste)
club soda or plain sparkling water
Directions
To make strawberry-rhubarb syrup, preheat oven to 325⁰ F. Combine water, rhubarb, strawberries, and sugar in a glass baking dish and bake for 1 hour, stirring every 15 minutes until rhubarb is tender. Let cool, then press through a fine mesh strainer. Syrup can be refrigerated for up to a week.
To make strawberry-rhubarb soda, pour 2 tablespoons rhubarb syrup into a small glass (double for a taller glass). Top off with club soda and stir to combine. Enjoy!
